Curried Rice with Chicken Recipe

Brown rice combined with chicken cooked in store-bought curry sauce.

Recipe Ingredients for Curried Rice with chicken

1 1/2 tbsp canola oil
2 cloves garlic, sliced
2 g ginger, sliced
270 g chicken breast, meat only cut into chunks
70 g curry sauce (bottled is fine - I've used biryani & tandoori)
1 tsp tomato paste
500 g brown basmati rice, cooked
15 g raisins

Recipe Directions for Curried Rice with chicken

  1. Cook rice per package instructions and set aside.

  2. Sauté garlic and ginger till just turning golden. Add chicken, a pinch of salt and curry sauce.

  3. Add a couple of tbsp water and tomato paste. Allow chicken to cook through in the sauce on low-medium heat. Add water as needed to prevent burning/sticking - but no more than 100ml.

  4. When chicken is cooked through and there is still some sauce in the pan, add in rice and stir well to coat with sauce and heat through.

  5. Spoon into a serving dish, garnish with raisins, quartered hard-boiled eggs and a few sprigs of fresh coriander leaves/cilantro.

  6. Serve with a spicy yoghurt side: to 150g thick natural yoghurt add a pinch of salt, 1/4 cup chopped cucumber (seeds removed), a crushed clove of garlic, 1/4 cup small chunks of fresh pineapple, 1/4 medium red onion (finely diced), and a sliced green hot chilli pepper (optional).
