Curried quinoa salad with shredded carrots, garbanzo, and lime

Recipe Ingredients for Curried quinoa salad

1 c
1 1/4 c water
75 g lime juice
10 oz
1/4 c
1/4 c
1/3 c
2 tbsp olive oil
2 tsp black pepper
2 tsp salt
1 tsp curry powder
1 tsp cinnamon
1 tsp ground cumin
1 c sliced green onions
3.27 serving Garbanzo beans no salt added

Recipe Directions for Curried quinoa salad

  1. Cook quinoa in lime juice, water and seasonings

  2. Mix together all other ingredients

  3. Lightly toast sliced almonds

  4. Cool quinoa and mix warm and cold ingredients together

  5. Dress with remaining lime juice, olive oil, salt and pepper

  6. Add feta (optional)
