Recipe Ingredients for Curried Pumpkin-Vegetable Soup Recipe (A graded)

5 ml (1 tsp) olive oil
1 medium onion, chopped (1/2 cup)
1 clove garlic, minced
500 ml (2 cups) Green Giant* Frozen Mixed Vegetables
425 ml pumpkin (about 1 3/4 cups/1 can)
398 ml (14 oz/1 can) diced tomatoes, undrained
184 ml (10 FL oz/1 can) vegetable broth
125 ml (1/2 cup) water
2 ml (1/2 tsp) sugar
7 ml (1 1/2 tsp) curry powder
5 ml (1 tsp) paprika

Recipe Directions for Curried Pumpkin-Vegetable Soup Recipe (A graded)

  1. In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook 1 to 2 minutes, stirring frequently, until onion is crisp-tender.

  2. Stir in all remaining ingredients. Heat to boiling. Reduce heat to low; cover and simmer 10 to 12 minutes, stirring occasionally, until vegetables are tender. If desired, season to taste with pepper.
