Recipe Ingredients for Curried Pumpkin Soup

1/2 medium onion, diced
2 tsp olive oil
2 cloves garlic, minced
1/2 tsp ginger
1 tsp cumin
1 tsp ground coriander
1 tsp curry powder
1/4 tsp salt
14 oz pumpkin puree
200 g potatoes, diced
2 cups low sodium chicken broth
1 cup water
14 oz coconut milk

Recipe Directions for Curried Pumpkin Soup

  1. Boil the potatoes until soft. Drain, and set aside until needed.

  2. Warm olive oil in a large pot over medium heat. Add diced onions and garlic until they begin to soften, about 3 minutes.

  3. Mix together all spices, add a small amount of water and mix. Add this mixture to the onions and garlic. Stir and let them cook for about 2 minutes.

  4. Add the pumpkin puree to the pot, mix.

  5. Add the broth, water and coconut milk. Stir occasionally and simmer for about 20 minutes. Turn off heat.

  6. Add the pre-cooked potatoes.

  7. Let cool before blending until smooth.
