A creamy fall soup made quickly with canned pumpkin.

Recipe Ingredients for Curried Pumpkin Soup

3 tbsp Smart Balance buttery spread
4 tbsp flour
2 tbsp curry powder (sweet)
4 cups water
1 ounce carrots
1 tsp celery salt
29 oz pumpkin
1 1/2 cup fat free milk
2 tbsp soy sauce
2 tbsp sugar
1 tsp pepper
1 tbsp hot sauce (or less to taste)

Recipe Directions for Curried Pumpkin Soup

  1. Melt smart balance in a large pot over medium heat. Stir in flour and curry powder.

  2. Add 1 ounce baby food carrots and 1 tsp celery salt to 4 cups water. Whisk into flour/Smart Balance mixture.

  3. Bring to a boil until thickened. Whisk in milk, pumpkin, and remaining seasonings.

  4. Let simmer until thick and bubbly.
