A wonderful, wonderful creamy soup with just enough spice and rich autumn aroma :P

Recipe Ingredients for Curried Pumpkin soup

1 tablespoon olive oil
1 clove garlic, minced
2 large onions, diced
2 large sweetpotato, peeled
5 medium carrots, chopped
4 cups pumpkin, baked
4 cups chicken broth
1 cup orange juice
1 tablespoon cumin
1 tablespoon sage
1 tablespoon coriander
1 tablespoon Turmeric
1 teaspoon salt
1 teaspoon pepper, ground
1 tablespoon ginger, ground
3 cups 1% milk
1/8 cup maple syrup

Recipe Directions for Curried Pumpkin soup

  1. sauté the garlic and 1/3 of the onions in olive oil, add the chopped carrots and sweet potatoes, the broth, orange juice and spices.

  2. Bring to a boil and simmer until carrots are almost cooked (still firm but breakable with wooden spoon). Add the pumpkin (I use fresh pumpkin i previously baked and peeled), let simmer until all veggies are fully tender. Let the soup cool a little. Place soup in blender with milk. Reserve.

  3. In a pan, sauté the remaining onions until soft (I use butter!) and add the maple syrup. Caramelize on low heat.

  4. Warm up pureed soup and serve with a Tablespoon (or more!) of caramelized onions! Yummy!
