Stew of potatoes, carrots, onions, tomatoes and black beans, curried

Recipe Ingredients for Curried Potatoes

1 1/2 tablespoons vegetable oil
3 cups onions, diced
3 cloves garlic, minced
4 large potatoes, cut into chunks
1 cup carrots, chopped
3 tablespoons curry powder
15 oz. black beans
1 1/2 cups tomatoes, chopped
1 cup vegetable broth
2 teaspoons chili powder
1 teaspoon white wine vinegar

Recipe Directions for Curried Potatoes

  1. Heat the oil in large skillet over medium heat. Add onions and garlic, and cook 5-7 minutes, or until onions are soft and translucent. Stir in potatoes, carrots, and curry powder, and cook 4 minutes.

  2. Add beans and their liquid, tomatoes, broth, chili powder, vinegar, and 1 cup water; season with pepper. Cover and simmer 45 minutes, or until potatoes are flaky and carrots are cooked through, stirring occasionally.
