Recipe Ingredients for Curried Peanut Soup

3/4 c carrot, shredded
1/2 c onion, chopped
2 tbsp flour
1/2 c celery, chopped
1/4 c margarine
1 tsp curry powder
1/4 tsp salt
2 cans (14.5 oz) Chicken Broth
2 tsp Worcestershire sauce
3/4 c creamy peanut butter

Recipe Directions for Curried Peanut Soup

  1. Cook and stir carrot, onion, and celery in margarine in a 2 quart saucepan until tender.

  2. Blend in flour, curry powder, and salt.

  3. Add chicken broth and Worcestershire. Cook and stir until thickened and bubbly. Reduce heat.

  4. Add peanut butter, stirring until thoroughly combined. Serve hot garnished with chopped peanuts shredded coconut if desired (not included in calorie count).
