Delicious curry peanut soup, best over rice, very rich.

Recipe Ingredients for Curried Peanut Soup

1 tbsp. olive oil
2 garlic cloves, large, crushed
1 cup onion, finely-chopped(I think this is too much ? I usually use about half that.)
2 tsp. ginger root, freshly grated
1 tsp. salt
1 cup raw peanuts, chopped
1/4 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. cardamom or coriander
1/2 tsp. dry mustard
1/2 tsp. turmeric
1 tsp. cumin
16 oz. vegetable stock
1/2 cup natural peanut butter
1 tbsp. honey
1/4 tsp. cayenne
12 oz. Fat-Free Buttermilk, room temperature

The topping:
2 bananas, fairly green
3 tbsp. lemon juice
3 tbsp. olive oil
1/4 tsp. cinnamon
1/4 tsp. turmeric
1 dash of salt
1 tbsp. sesame seeds

Recipe Directions for Curried Peanut Soup

  1. Saute the butter, garlic, onion, ginger, and salt over medium heat. Add: raw peanuts, cinnamon, cloves, cardamom (or coriander), dry mustard, turmeric, cumin. Saute, stirring, another 8-10 minutes over medium-low heat. Add: stock (or water), peanut butter, raisins, honey, cayenne. Mix and cover. Simmer over very low heat 1 hour, stirring occasionally. Add: buttermilk

  2. Topping: Peel bananas, slice thinly, and put in lemon juice for 10 minutes.

  3. Heat the butter, add the bananas and juice, and everything else. Fry, gently stirring, 5-8 minutes over medium-low heat.
