Recipe Ingredients for Curried Parsnip Soup

1 large onion, chopped
2 cloves garlic, crushed
1 tbsp butter
2 tsp mild curry powder
800 g parsnips, peeled and chopped
350 g potato, peeled and chopped
3 vegetable stock cubes
1 3/10 litres water
100 g Cream, Single, Dairy Council Values

Recipe Directions for Curried Parsnip Soup

  1. Fry onion and garlic in butter for five minutes over a low heat, adding the curry powder for the last minutes.

  2. Add parships and potatoes along with water and stock cubes.

  3. Bring to the boil and simmer, covered, for 40 minutes.

  4. Cool, blend. reheat and adjust seasoning.

  5. Stir in single cream and garnish with chives or coriander.
