Recipe Ingredients for Curried Okra and Eggplant

65 g onion, finely chopped
1 tbsp canola oil
1 tsp coriander seed, ground
1 tsp cumin seed, ground
1 tsp salt
1 pepper, hot chili, green, finely chopped
1 tbsp mustard seeds, whole
1 1/2 cups (200g) diced eggplant
2 cups (230g) chopped okra
1 cup (150g) onions, whole pearl, cut in half
2 tbsp coriander leaves, finely chopped

Recipe Directions for Curried Okra and Eggplant

  1. Sautee the onion in the oil

  2. Add the seasonings and the chili

  3. Stir until blended

  4. Add the mustard seed; heat until the seeds start to pop

  5. Add the eggplant

  6. Stir until eggplant is coated with spicy oil; add more oil only as necessary

  7. Add the chopped okra and the halved baby onions

  8. Stir until okra and onions are coated with spicy oil

  9. Lower heat and continue to sautee, stirring occasionally, until the desired degree of doneness is reached

  10. Add the chopped coriander and stir into the vegetables

  11. Remove from heat

  12. Let sit for a few minutes before serving
