Yummy but very high in calories due to nuts and breadcrumbs

Recipe Ingredients for Curried nut roast

2 tablespoon vegetable oil
6 3/4 oz walnuts, finely chopped
1 1/4 oz Sage and Onion Stuffing Mix
2 medium onions, chopped finely
1 medium red pepper, deseeded and chopped finely
3 oz breadcrumbs, wholewheat
2 garlic cloves, chopped finely
1 teaspoon dried mixed herbs
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon ground fenugreek
1 teaspoon paprika
400 grams canned tomatoes, drained
1 salt and pepper, season to taste

Recipe Directions for Curried nut roast

  1. Heat oil in a frying pan and fry the onions and peppers for about 10 minutes or until softened. Drain and set aside.

  2. Now add all other ingredients in a bowl and mix well, then add the peppers and onions to the mix and mix well and then place mixture into a greased 1lb loaf tin.To grease tin just use the drained oil from onions and peppers.

  3. Place in pre heated oven at gas mark 7 for 30 - 40 minutes or until golden brown and piping hot.

  4. Turn tin upside down onto a plate and it should come out neatly so you can present it with seasonal vegetables around the dish. Perfect for a veggie on Sundays or whenever you fancy a roast dinner.
