Warming hearty low fat soup that can serve 4 as a main course or 8 as an appetiser

Recipe Ingredients for Curried Mushroom Soup

15 g shiitake mushrooms
35 g oyster mushrooms
30 g porcini mushrooms
400 g mushrooms
1 celery stalk
50 g shallots
400 g stock
1 tbsp curry
1 clove garlic

Recipe Directions for Curried Mushroom Soup

  1. Rehydrate the dried porcini, shiitake & oyster mushrooms with approx 450mls hot water and leave to stand

  2. Sautee the shallots, celery and garlic until translucent (about 3 minutes)

  3. Add the dried exotic mushrooms & curry powder and cook until soft

  4. Add stock & fresh mushrooms and cook for 5 mins

  5. Cover & simmer for 20 mins

  6. Blitz & serve with fresh chopped chervil & a dash of sherry
