Recipe Ingredients for Curried Lentils, Rice and Vegetable Casserole

340 g carrot (view)
200 g green pepper (view)
454 g lentils (view)
2 medium onions (view)
2 cloves garlic (view)
37 g ginger (view)
5 cups water (view)
53 g jalapenos (view)
396 g baby corn (view)
250 g celery (view)
716 g rice (view)
88 g (Koo Koo Roo) Curry Sauce
1 tbsp Mustard Seed
50 g Cilantro
1 tbsp Turmeric

Recipe Directions for Curried Lentils, Rice and Vegetable Casserole

  1. cook rice per instruction*

  2. bring 5 c water and lentils to boil, reduce to simmer, cook 10 minutes with tilted lid

  3. Add chopped onion, jalapeno, cilantro, ginger and garlic, simmer another 10 minutes with tilted lid

  4. Stir in chopped carrots, celery, green pepper, rice, curry sauce** and spices

  5. Stir to mix well

  6. Add in cooked rice, stir to mix well

  7. If desired, heat through***

  8. *I use Calrose

  9. **I used S&B Golden Curry 550 calories for 100g, but it's not listed on the site, so I substituted and adjusted for 550 calories - there's plenty of salt and oils in this sauce, so no need to add any

  10. ***For crisper vegetables, do not overcook/heat -- if making ahead to reheat for lunch/dinner, skip this step altogether.
