Curried lentils, heavily spiced over rice

Recipe Ingredients for Curried lentils with rice

1 onion
1 cup lentils
5 cups water
1 tsp salt
1 tsp pepper
1 tsp turmeric
1 tsp curry powder
1 tsp cayenne
1 tsp mustard seed
2 cups rice
1 tbsp butter
1 tsp olive oil
1 onion
1 cup spinach

Recipe Directions for Curried lentils with rice

  1. Dice Onion

  2. Mix spices

  3. toast in oil

  4. add onion and cook on med-low for 10 min

  5. add lentils, toast for a minute

  6. and add water. Cook until done - 30-45 minutes.

  7. Add spinach and wilt

  8. Cook rice separately, and serve lentils over rice.
