Recipe Ingredients for Curried Lentils

3 cup (RAW= 1 cup cooked)) Black Lentils
3 tbsp Olive Oil
1 1/5 cup, chopped Onions
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
4 tbsp Cumin Seed
1/2 cup Curry Powder
12 serving Plum Tomatoes with Basil No salt added Trader Joe's
6 clove Garlic
1/2 oz Garam Masala Powder
2 tsp Sea Salt

Recipe Directions for Curried Lentils

Rinse lentils and soak overnight. Slice onions and peppers. Heat the oil in a pan. Add the cumin and curry powder and cook less than a minute. Add the onions and peppers and cook until very soft. Add the lentils and enough water or vegetable broth just to cover. Simmer, stirring frequently. Add more liquid as needed. Once the lentils are soft, add the tomatoes with their juices. Cook until heated through. Serve with rice or naan. Enjoy!
