Curried Lentils Recipe

Filling and a great source of protein, iron and vitamin C.

Recipe Ingredients for Curried lentils

2 tbsp olive oil
2 medium onions
2 tbsp curry powder
1 tsp ground cumin
8 oz lentils
1 pint water
2 tbsp lemon juice
1/2 tsp lemon rind

Recipe Directions for Curried lentils

  1. Heat oil in a deep saucepan and sauté the onions for 4-5 minutes. Add the spices and cook for 2 mins. Was, rinse and drain the lentils and add them to the sauté. Cook for further 2 mins.

  2. Pour the stock into the pan, and add the lemon juice and rind. Bring to the boil, then season to taste. Cover, reduce the heat and simmer for 20-25minutes, stirring occasionally. Add a little extra stock if necessary.
