Lentils with a slight curry flavor, great over rice for a veggie main dish or alone as a side dish!

Recipe Ingredients for Curried Lentils

1 cup lentils
3 cups water
1/2 tsp salt
1 tsp curry powder
1 clove garlic
2 onions, chopped
1/2 tbsp olive oil

Recipe Directions for Curried Lentils

  1. Sort and rinse lentils. Add 1/2 of the onions to lentils and water, and simmer 30 to 40 minutes (Until tender.) Drain.

  2. While lentils simmer, heat olive oil in a small pan. Add the remaining 1/2 of the onions and garlic, and saute until lightly brown.

  3. When lentils are tender, drain them and add the remaining ingredients.
