These lentils are not for the faint of heart

Recipe Ingredients for curried lentils

1/4 cup lentils
1/2 small onion
1 clove garlic
1 medium carrot
1 celery stalk
1 tsp curry powder
5 oz diced tomatoes (undrained)
2 tsp hot sauce
1 tbsp olive oil
1 cup vegetable broth
1 salt and pepper to taste

Recipe Directions for curried lentils

  1. 1 rinse and sort lentils

  2. 2 chop vegetabled and garlic

  3. 3 saute onion in soup pan for about 5 minutes

  4. 4 add garlic, carrots, and celery to pan and saute for another few minutes, careful not to burn the garlic, add curry powder during last 30 - 60 seconds

  5. 5 add lentils, vegetable broth (about one cup), and tomatoes; simmer for about 30 minutes, if desired add seasonings (i like basil and cilantro) during the last few minutes of simmering, season with salt and pepper

  6. 6 enjoy
