Curried lentils, carrots, onions, and raisins served over couscous

Recipe Ingredients for Curried lentils and couscous

3/4 c dried lentils
1 1/2 c water
1 large onion, chopped
8 oz. carrots, sliced
1 c golden raisins
2 tbsp olive oil
2 tbsp curry paste
1 tbsp sugar
1 1/2 c couscous
1 3/4 c water

Recipe Directions for Curried lentils and couscous

  1. Combine lentils and water in small pot, and bring to a boil. Reduce heat and allow to simmer for 15-20 minutes.

  2. Saute onions in olive oil until translucent.

  3. Add carrots and saute an additional 2-3 minutes, then add lentils (with the water they cooked in), raisins, curry paste, and sugar.

  4. Allow lentils mixture to simmer while cooking couscous, adding water as necessary.
