Recipe Ingredients for Curried Lentil Stew

3 tbsp butter
274 g carrots, peeled and finely chopped
221 g celery, finely chopped
422 g onions, finely diced
11 g garlic, minced
2 tablespoons curry powder
11 cups water
1 pound dried lentils, rinsed and picked over
2 cups brown basmati rice
3 teaspoons beef bouillon
28 ounce crushed tomatoes
20 ounces Frozen Cut Leaf Spinach
3 tsp kosher salt

Recipe Directions for Curried Lentil Stew

  1. In a large stock pot, saute carrots, celery and onion in butter until just tender

  2. Add garlic and curry powder, saute another 2-3 minutes

  3. Deglaze pan with 1 cup water

  4. Add rest of water, rice, and bouillon. Bring to a boil, reduce heat, cover and simmer for 15 minutes.

  5. Add lentils, cover and simmer for 30 minutes or until lentils are tender

  6. Stir in tomatoes and spinach

  7. Simmer to desired consistency

  8. Stir in 1 cup milk if desired

  9. Salt and pepper to taste
