Very flavorful! Add jalapenos if you like, and mango chutney (which I have never had). Also try chunks of fresh mango added.

Recipe Ingredients for Curried lentil soup

1 tbsp Vegetable Oil, Canola
1 large Onions
3 clove Garlic
6 tsp Ginger Root
1.5 tbsp Curry Powder
1 tsp Cinnamon, Ground
1 tsp Cumin
2 leaves Bay Leaves
1.5 cup Lentils, Mature Seeds
8 cup (8 fl oz) Soup, Chicken Broth Or Bouillon
1/4 cup Cilantro

Recipe Directions for Curried lentil soup

  1. Saute onion in the oil until softened.

  2. Add garlic, ginger, jalapeno, curry powder, cinnamon, cumin, and bay leaves. Cook, stirring, for about 5 minutes longer.

  3. Stir in lentils and broth and bring to a boil.

  4. Reduce heat to low and simmer, partially covered, until lentils are tender, about 45 minutes.

  5. Discard bay leaves. Stir in cilantro, lemon juice and chutney.

  6. Serve with dollop of plain yogurt.
