A yummy soup slightly adapted from Julee Rosso's Spring Lentil Soup. There is very little oil so you need to use a heavy pot so the onion & celery don't burn & stick to the bottom.

Recipe Ingredients for Curried Lentil Soup

1/2 tsp olive oil
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup lentils (dry)
1/2 cup canned tomatoes, roughly chopped
3 cups low sodium chicken broth
1 tsp curry powder
1 tsp coriander (ground)
2 tbsp lime juice

Recipe Directions for Curried Lentil Soup

  1. Heat the oil in a heavy pot. Add onion & celery and cook over low heat until soft & translucent. About 12-15 minutes.

  2. Add lentils, tomatoes, broth, curry powder, coriander and 1/2 the lime juice. Bring to a boil, lower the heat and simmer covered until the lentils are cooked and tender. 30-45 minutes.

  3. Stir in the remaining lime. Taste & adjust seasoning and serve. This can be garnished with fresh cilantro if desired.

  4. This dish can easily be made vegetarian by substituting vegetable broth/stock for the chicken broth.
