Recipe Ingredients for Curried Lentil Soup

2 teaspoons olive oil
1 cup chopped onion
1 1/4 teaspoons curry powder
2 cups water
4 cups low sodium fat free chicken broth
3/4 cup red lentils
2 tablespoons chopped fresh basil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
14 1/2 ounces diced tomatoes, undrained
2 tbsp Fresh basil (optional)

Recipe Directions for Curried Lentil Soup

  1. Heat oil in a large Dutch oven over medium-high heat. Add onion; sauté 4 minutes.

  2. Add curry; sauté 1 minute.

  3. Add water, chicken broth, and lentils

  4. Bring to a boil.

  5. Cover; reduce heat.

  6. Simmer until lentils are tender.

  7. Place 4 cups lentil mixture in a blender; process until smooth.

  8. Return mixture to pan.

  9. Add chopped basil, vinegar, salt, and tomatoes.

  10. Cook until thoroughly heated.

  11. Garnish with basil, if desired.
