Recipe Ingredients for Curried Lentil Salad

2 cups Green Lentils
2 cups (16 fl oz) Water
1 cup, diced Celery
1 cucumber (8-1/4") Cucumber
1 cup (not packed) Raisins, Seedless
1 medium raw Onion Red
1/2 cup, sliced Almonds
2 oz Extra Virgin Olive Oil
2 oz White Wine Vinegar, Organic
1/2 oz Agave Nectar
1/2 tsp Sea Salt
1 tsp Pepper, Black
3 tsp Curry Powder

Recipe Directions for Curried Lentil Salad

  1. Simmer the lentils in the water until tender, about 20-30 minutes.

  2. Chop celery, cucumber & nuts.

  3. After lentils cool, add celery, cucumber, raisins, and onion.

  4. Whisk together oil, vinegar, sugar, salt, pepper, and curry.

  5. Stir together and chill before serving. Makes 12 3/4 cup servings.
