Delicious, tangy vegan salad. Exceedingly healthy.

Recipe Ingredients for Curried lentil salad

3 tablespoons olive oil
2 tablespoons red wine vinegar
1 cup baby spinach
6 cherry tomatoes
1 1/2 cups green lentils
1/2 cup mint
1/5 cup coriander
1 red onion
1 tablespoon curry paste
1/2 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Curried lentil salad

  1. Fry curry powder for 20 seconds in 1 tablespoon olive oil over high heat.

  2. reduce heat and add lentils, stirring to evenly distribute paste. cover with water and simmer for 20 minutes. Keep topping up water, do not let it dry boil.

  3. Finely chop up mint and coriander, shred spanish onion, cut tomatoes into quarters. Mix up a dressing out of remaining olive oil, vinegar and salt and pepper.

  4. When lentils are ready take off the heat, drain and rinse (make sure the lentils are not still hot).

  5. Mix all ingredients in large salad bowl.

  6. Delicious!
