Recipe Ingredients for curried lentil and eggplant

2 medium eggplant
1/2 tbsp parsley
1/2 cup lentils
3 tbsp olive oil
2 tbsp parmesan cheese
1/2 cup mushrooms
1/2 large red onion
1 1/2 tbsp garlic
1 tbsp ginger
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp turmeric
1 tsp curry powder
1/2 tsp paprika
1/2 tsp cumin

Recipe Directions for curried lentil and eggplant

sautee spices and veggies, cook lentils separately. Drain lentils and add to veggies. (optional) place mix in baking dish, cover, and cook @ 400 degrees for 20 minutes to tenderize eggplant and blend spices.
