Curried lentil, butternut squash, and cashew soup. Adapted from a recipe using 750 g grated carrots in place of squash.

Recipe Ingredients for Curried lentil, butternut squash, and cashew soup

1 cup lentils, drained and rinsed
650 g butternut squash, cubed
6 cups water
5 servings vegetable bouillon
1 onion, chopped
1/2 cup unsalted cashews
2 tbsp curry paste
1/2 cup cilantro, chopped
2 tbsp olive oil
1/2 cup

Recipe Directions for Curried lentil, butternut squash, and cashew soup

  1. Bring vegetable stock (bouillon and water) to a boil.

  2. Add lentils and squash, and return to a boil. Boil for 8 minutes, or until soft.

  3. Meanwhile, add chopped onion and cashews to a frying pan with olive oil. Cook 2 - 3 minutes, or until onions are translucent.

  4. Add cilantro and curry paste to frying pan, and mix. Cook 1 - 2 minutes, or until fragrant.

  5. Add onion mixture to liquids, and cook for 5 - 10 minutes.

  6. Transfer soup to food processor and blend until smooth.

  7. Stir in yogurt now, or add a dollop before serving.
