Recipe Ingredients for Curried Garbanzo Beans

1 1/2 c. garbanzo beans
1 T. oil
1 tsp. coriander
1 tsp. cumin
1 tsp. turmeric
1/4 tsp. cayenne
3/8 tsp. ground cloves
3/8 tsp. cinnamon
1/3 tsp. ground ginger
2 T. lemon juice
1 T. fresh cilantro
2 diced tomato

Recipe Directions for Curried Garbanzo Beans

  1. Heat oil in saucepan; cook spices over low heat for a few minutes.

  2. Stir in garbanzos and enough liquid to just barely cover.

  3. Stir well; mash a few beans with a fork or potato masher.

  4. Cook beans over medium heat for about 20 minutes, or until sauce thickens.

  5. Remove from heat and stir in lemon juice and tomato.
