A Caribbean take on curry, can be served with brown rice and vegetables. To further reduce calories omit the butter and saute in water. To make dish more ethnic, add the traditional indian spices of garam masala, cumin and coriander.

Recipe Ingredients for Curried Fish

1 lb tilapia fillets
1/2 cup onion, chopped
2 tbsp light butter
1 lb tomatoes, coarsely chopped
2 tbsp curry powder
1 tbsp corn starch
1 tbsp water

Recipe Directions for Curried Fish

  1. Cut fish into 1 inch strips.

  2. Saute fish and onions in butter for 3 - 4 mins or until fillets are cooked.

  3. While fish is cooking, bring tomatoes and curry to boil in a saucepan.

  4. Blend cornstarch and water and gradually stir into tomatoes.

  5. Cook stirring constantly until thick.

  6. Combine with fish mixture and stir.
