Acorn squash seasoned with mild curry and dill.

Recipe Ingredients for Curried Dill Acorn Squash

3 cup, cubes Squash, Winter, Acorn
5 tbsp Bacon
12 oz Fat Free Evaporated Milk
2 tbsp Light Buttery Spread with Flax Oil
1 tsp Curry Powder
1 tsp(1 g) Dill Weed, Dried
4 tbsp chopped Onions

Recipe Directions for Curried Dill Acorn Squash

  1. cook squash by preferred method.

  2. Preheat oven to 350F.

  3. Spray 2qt casserole dish with non stick cooking spray.

  4. Sautee onion in 2 tbsp Smart balance.

  5. Add bacon, curry powder, dill and 2 tbsp flour.

  6. Add evaporated miilk and bring up to bubbling.

  7. Scrape pan well.

  8. De-seed and scoop out squash and add to milk mixture.

  9. pour into prepared dish.

  10. Bake on 350F for 20 minutes or until heated through.
