Recipe Ingredients for Curried Corn Bisque

1 tablespoon canola oil
1 medium onion, chopped
1 teaspoon minced garlic
1 tablespoon curry powder
1 1/2 teaspoons hot sauce
32 ounces frozen corn
3 cups chicken broth
1 cup water
8 ounces coconut milk, light version

Recipe Directions for Curried Corn Bisque

Heat oil in a large saucepan over medium-high heat. Add onions and garlic and cook, stirring occasionally, until soft, about 3 minutes. Add curry powder and hot sauce and stir to coat the onions and garlic. Stir in corn, broth and water; increase the heat to high and bring the mixture to a boil. Remove from heat and blend with an immersion blender to desired consistency. Then slowly add coconut milk into soup and heat up again to serve. Makes ~ 8 one cup servings.
