Recipe Ingredients for curried collards and coconut soup

1 cup slices Carrots
2 cup, diced Celery
2 cup, chopped Peppers, Sweet, Red
4 cup Vegetable Stock
16 oz Collards
15 fl oz Organic Lite
6 cup Rice, Brown, Long-grain, Cooked

Recipe Directions for curried collards and coconut soup

  1. Make Rice on Side

  2. Sweat all the veggies excluding Collards

  3. then put in chopped collards ( fresh or frozen if frozen simmer until thawed if fresh simmer until tender) around a pound or more.

  4. Then add in your salt, pepper,few tablespoons of cider vinegar and yellow curry powder (1/4 cup or add until you get the right taste) simmer for about 5 minutes

  5. add in a can or two of unsweetened coconut milk.

  6. to finish it I make a slurry (equal parts cornstarch and water) and whisk in until it thickens just a little bit.

  7. Put 3/4 cup of rice in the bottom of a bowl and fill
