Recipe Ingredients for Curried Coconut Chicken

8 oz chicken breast
4 oz lite coconut milk
1/2 cup fire roasted diced tomatoes
1/8 onion
1/2 garlic clove
1/2 cup tomato sauce
3/4 tsp olive oil
1 tsp red curry powder
1 tsp sugar

Recipe Directions for Curried Coconut Chicken

  1. Prep: Dice chicken breast, thinly slice the onion, and mince the garlic

  2. Season chicken with salt and pepper.

  3. Heat oil and curry powder in a large skillet over medium-high heat for two minutes.

  4. Stir in onions and garlic, and cook 1 minute more.

  5. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.

  6. Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine.

  7. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.
