Curried Chickpeas and Rice 1/4 C serving

Recipe Ingredients for Curried Chickpeas and Rice

16 oz chickpeas
1 carrot, sliced
1 potato, diced
1 tbsp garlic, finely chopped
1 Curry, to taste
1/4 tsp Salt and black pepper, to taste
2 cups of rice, uncooked
4 cups of water
1/2 cup of white wine

Recipe Directions for Curried Chickpeas and Rice

  1. Fry the diced onion in a medium-hot pot in some olive oil.

  2. Add the finely chopped garlic.

  3. Add the chickpeas, carrots, and potato.

  4. Add the water and white wine; allow to boil.

  5. Add the curry, salt and black pepper.

  6. Rinse the rice, and add it to the boiling mixture.

  7. Allow the mixture to come to a boil for about 5 minutes.

  8. Cover and simmer for about half an hour until done to your taste.
