Curried chickpeas for over rice or naan. Also good alone!

Recipe Ingredients for Curried Chickpeas

16 oz Garbanzo Beans (Chick Peas), Organic
1 medium (2-1/2" dia) Onions
1 tsp Ginger Root
5 clove Garlic
3 tsp Curry Powder
0.5 tsp Salt, Table
1 Medium Tomatoes
1 tbsp Olive Oil

Recipe Directions for Curried Chickpeas

  1. Sauté onions in olive oil for 3 minutes.

  2. Add garlic, ginger and curry. Cook for another minute.

  3. Rinse and drain chickpeas. Add chickpeas and salt. Cook for a minute or so. Add a tablespoon of water if it is sticking.

  4. Dice tomato and add. Cook for five minutes. Add another spoonful of water if it seems dry.

  5. Serve over rice or on it's own.
