Recipe Ingredients for Curried Chickpea Salad

5 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1/2 cup Peas, Green
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 medium (4-1/8" long) Onions, Spring Or Scallions
2 tsp Curry Powder
1 fl oz Lime Juice, Canned Or Bottled, Unsweetened
1/3 cup Lite Coconut Milk
2 serving, raw Cilantro

Recipe Directions for Curried Chickpea Salad

Combine lime juice, scallion, and curry. Stir in coconut milk. Add chickpeas, peas, and peppers and toss to dress. Sprinkle with salt and pepper. Add cilantro just before serving.
