Recipe Ingredients for Curried Chicken and Veggies

3 tbsp olive oil
3 tbsp curry powder
1 1/2 cup soy milk, or light coconut milk
1/2 cup green beans
1 sweet red pepper
1 tbsp garlic
1 tbsp ginger root, grated
1 large carrot
456 g skinless chicken breasts
1 cup tofu, sliced
1/2 cup salsa
1 tbsp cilantro, chopped

Recipe Directions for Curried Chicken and Veggies

saute chicken, garlic, and ginger in curry and oil until mostly done, add the rest of the ingredients and toss until cooked through and flavors have combined. Serve on a bed of cooked quinoa.
