A mild curry dish that's easy to prepare, high in vitamins & minerals and lots of fibre. Serve with brown basmati rice.

Recipe Ingredients for Curried Chicken Stew

1 tsp olive oil
1/2 lbs boneless skinless chicken breasts
1/2 medium onion, chopped
1/2 medium zucchini, chopped
1 clove garlic, minced
1/4 cup low sodium chicken broth
1/2 cup chickpeas
1/2 cup canned tomatoes
1/2 cup carrot, chopped
1/2 cup celery, chopped
1 tbsp curry powder
1 tsp ground cumin

Recipe Directions for Curried Chicken Stew

Heat oil in lidded skillet and saute onion, carrot & celery for 5 mins to soften. Add garlic and spices and cook for 1 min. Add diced chicken to pan and cook for 3mins. Add other ingredients , mix well, cover and cook for 30mins on low heat until chicken is cooked through. Salt & pepper to taste - adjust curry to taste as well.
