Recipe Ingredients for Curried chicken soup

353 g onion
99 g turnip
223 g carrot
180 g apple
2 tbsp olive oil
315 g grilled chicken
1 salt
1 pepper
2 tbsp curry powder
5 c vegetable broth

Recipe Directions for Curried chicken soup

  1. Chop the onion.

  2. Heat the oil in a pan and add the onion. Let it cook until it is soft.

  3. Chop the turnip and the carrots. Peel and core the apple. Chop it as well.

  4. Add the turnip, the carrot and the apple to the pan and cook for another 3-4 min.

  5. Add the curry powder and coat the veggies well.

  6. Then, add vegetable (or chicken) stock and let simmer for 45 min.

  7. Add the lemon juice and season with salt and pepper to taste.

  8. Blend until smooth.

  9. Cook the chicken separately (I grilled it with salt and pepper and some curry powder) and let it cool.

  10. Cut the cold chicken into pieces and add to the soup. Warm it through.

  11. The recipe calls for 1/2 c rice to be served with each bowl of soup.
