Curried chicken salad with pineapple and grapes

Recipe Ingredients for curried chicken salad

1 serving Chicken 33% Less Sodium Broth Rtsb
336 grams Boneless Skinless Breast Fillets
160 grams Light Dressing
4 oz Plain Nonfat
7 tsp Curry Powder
1 wedge yields Lemon Juice
0.5 tbsp Honey, Strained Or Extracted
0.5 tsp Ginger, Ground
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
0.5 cup, chopped Onions
0.5 cup Grapes
0.25 cup Almonds Sliced
0.25 cup Almonds Sliced
1 cup, diced Pineapple

Recipe Directions for curried chicken salad

  1. Ingredients: * use these quantities. Official list is modified to meet correct calorie count. 1.5 cups boiling water mixed with 2 tbsp chicken broth concentrate. 315-350 grams boneless skinless chicken breast. 1/2 cup mayonnaise, 1/3 cup plain yogurt, 4 tsp curry powder, 1tbsp lemon juice, 1 tsp honey, 1/2 tsp Ginger (ground), 1/2 tsp salt, 1/4 tsp papper, 1/2 cup onion, 1/2 cup sliced red grapes, 1/4 cup sliced almonds, 1 cup pineapple.

  2. Cook chicken over med heat in broth until fully cooked. Drain ad chill

  3. Mix mayonnaise, yogurt, curry, Ginger, salt, pepper, lime and honey

  4. Add onion, grapes, pineapple, almonds and chilled chicken to mayonnaise mixture.

  5. Best when chilled for a few hours before serving. I like to make this and take it in my lunch all week. I eat it in a whole wheat tortilla
