I modified this to smaller portions from the Barefoot Contessa Family Style and using ingredients I had on hand.

Recipe Ingredients for Curried chicken salad

2 cups chicken breast
1/4 cup mayonnaise
1 tsp curry powder
2 tbs mango chutney
1 tbs white wine
1 tbs golden raisins
1 oz cashews
1/2 cup celery
2 green onions, sliced

Recipe Directions for Curried chicken salad

  1. Roast a chicken breast. Cool and remove meat; cube.

  2. Slice celery and green onion and add to chicken. Add the raisins.

  3. Mix a dressing of the mayo, chutney, wine, and a pinch of salt. Add to the meat/veg. mixture and stir well.

  4. Store in fridge for a couple of hours. Add cashews just before serving. Tastes great on a bed of lettuce, or as a sandwich.
