Curried Chicken Salad with raisins

Recipe Ingredients for Curried Chicken Salad

12 oz chicken breast
1/3 cup celery, chopped
1/3 cup onion, minced
1/4 cup carrot, grated
1/2 cup light mayonnaise
1 1/4 tsp curry powder
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp honey
1/2 cup raisins
1 tbsp lemon juice

Recipe Directions for Curried Chicken Salad

  1. Blend mayonnaise, curry, pepper, and paprika together and set aside.

  2. Using two forks, shred the cooked chicken breast in a large bowl.

  3. Add chopped onion,celery, and grated carrots and mix together.

  4. Add seasoned mayonnaise and blend.

  5. Add raisins or cranberries and fold together.

  6. Cover and place in refrigerator for 30-60 minutes to allow flavors to come together before eating.

  7. 1 serving is about 3/4 cup
