I make a generic chicken salad base and then throw in whatever spices suit my mood. For this one, I add diced English cucumber and capers in a bit of their brine to this recipe and eat it for lunch.

Recipe Ingredients for Curried Chicken Salad Base

30 oz canned chicken
1 cup mayo
2 tbsp mustard, yellow
1/4 cup onion, dehydrated
2 tbsp dill, dried
1 tbsp parsley, dried
1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
1 tbsp curry powder

Recipe Directions for Curried Chicken Salad Base

  1. drain chicken

  2. place in bowl

  3. flake the chicken

  4. add the dehydrated onion

  5. add the mayo and mustard

  6. mix

  7. add other herbs/spices stirring in between

  8. once mixed, wait 5 - 10 minutes and taste

  9. at that point, salt and pepper to taste

  10. note: can last, covered, in the refrigerator for at least a week.
