Recipe Ingredients for Curried Chicken and Rice

2 lbs boneless skinless chicken breast
3 cups cooked white rice
1/2 cup minced onion
6 tbs butter
6 tbs flour
2 1/2 tsp curry powder
1 1/2 tsp splenda
1/4 tsp ground ginger
1 cup low sodium chicken broth
2 cups nonfat milk
1 tsp lemon juice

Recipe Directions for Curried Chicken and Rice

  1. Boil chicken until cooked and cut into bite sized pieces. Saute onion and butter in the top of a double broiler, over direct heat, until onion is tender. Stir in flour, curry, splenda, and ginger. Add broth and milk. Cook over boiling water until thickened. Add chicken and lemon juice. cook until well heated and serve over rice.

  2. I recommend serving with a salad and either your favorite fruit or hot veggie.
