This savory casserole is a great way to get another meal from a little bit of leftover chicken or turkey.

Recipe Ingredients for Curried Chicken & Rice Casserole

2 tbsp margarine
2 stalks celery, chopped
1 onion, minced
2 carrots, chopped
1 Granny Smith Apple, peeled, cored, and chopped
2 cups uncooked brown rice
2 cups diced cooked turkey
5 cups low-sodium chicken broth
1 cup 1% milk
1 tbsp curry powder
1 tsp black pepper

Recipe Directions for Curried Chicken & Rice Casserole

  1. Preheat over 350 degrees.

  2. Melt butter in a large skillet over medium-high heat. Add celery, onion, carrots, and apple; cook, stirring for a few minutes. Add next 7 ingredients; stir until well combined.

  3. Pour mixture into an 8-inch square casserole dish. Sprinkle with additional curry powder, if using. Bake 45 minutes or until bubbly and rice is tender.
