Delicious casserole from Mary Ostyn's "Family Feasts for $75 a Week". A great way to get another meal froma little bit of leftover chicken or turkey.

Recipe Ingredients for Curried Chicken and Rice Casserole

2 tbsp olive oil
2 stalks celery
1 medium onion, minced
2 carrots, chopped
1 apple, peeled cored and chopped
2 c uncooked brown rice
2 c diced cooked chicken
5 c chicken broth
1 c plain yogurt
1 tbsp curry powder
1 tsp black pepper
1 salt to taste

Recipe Directions for Curried Chicken and Rice Casserole

  1. Preheat oven to 350 degrees F.

  2. Heat oil in a large skillet over medium heat. Add celery, onion, carrots, and apple; cook, stirring fro a few minutes. Add next 7 ingredients; stir until well combined.

  3. Pour mixture into a 9 x 12'' baking dish. Bake 1 1/2 hours or until bubbly and rice is tender.
