Makes 2 servings



Quick curried chicken to be served over raw spinach. Leave out the yoghurt to redcue calories. Subsitute Cauliflower for veg version.

Recipe Ingredients for Curried Chicken

1 med Yellow Onion - Chopped
7 oz Chicken Breasts, meat only, raw - cut in strips
2 tsp Curry powder
2 tsp Chilli powder (to taste)
1 tsp Cumin
1 tbl olive oil
1 cup of yoghurt
1 cup Spinach, raw (serve chicken over spinach)

Recipe Directions for Curried Chicken

  1. Heat Olive oil and add chopped onion.

  2. Add the raw chicken and cook until browned.

  3. Add the spicy to taste and simmer (add water if insufficient liquid)

  4. When chicken is cooked through, add the yoghurt and stir to mix spices.

  5. When thoroughly mixed, serve over raw spinach.
