Recipe Ingredients for Curried Chicken I

15 oz. skinless chicken breast
1 tbsp. canola oil
1 medium onion, finely chopped
1 clove garlic, minced
2 tsp. curry powder
1/4 tsp ground ginger
3/4 cup low sodium chicken broth
1 tsp. cornstarch
1 tbsp. water (mixed with cornstarch)

Recipe Directions for Curried Chicken I

  1. Halve chicken breasts & dice.

  2. Heat butter in large frying pan & brown chicken. Remove chicken from pan.

  3. Add onions to the remaining margarine in the pan. Cook and stir over medium heat until onions soften & begin to brown. Mix in garlic and curry powder. Cook, stirring, for 1 minute. Mix in ginger. Return chicken to pan.

  4. Pour chicken broth over chicken. Bring to boil. Cover & reduce heat to simmer until chicken is tender, about 45 minutes.

  5. Remove chicken pieces to warm serving dish. Skim & discard any fat from cooking liquid. Stir in cornstarch mixture. Cook, stirring until thick & clear. Salt to taste. Pour over chicken.

  6. Add parsley for flavor & garnish, if desired.
