Indo-Caribbean style curried chicken

Recipe Ingredients for Curried Chicken

3 chicken breast
4 chicken drumsticks
1 1/2 tsp salt
1 tsp black pepper
1 tbsp garlic, minced
1 tbsp chives, minced
1 tbsp parsley, minced
1 tomato, sliced
1 onion, sliced
1 cup water
1 tbsp canola oil
1 tbsp curry
1 tsp saffron
1 tsp ginger, minced

Recipe Directions for Curried Chicken

  1. Mix chicken (cut into 1-2 inch cubes) in bowl with salt, black pepper, garlic, ginger, chive, celery, onion and tomato. Leave to marinate for 30 mins in the fridge.

  2. Mix saffron and curry in 2 tbsp of water to form a smooth paste.

  3. Heat oil in pot, then pour curry paste into oil.Let curry cook for 2 - 3 mins. until water dries out. Throw contents of bowl into cooked curry paste and stir well.

  4. As water is released from chicken allow it to reduce until most of the water is gone, right before the chicken starts to stick to the pot, stirring constantly during this process.

  5. At this point add rest of water, lower heat and cover pot to allow chicken to cook 20 - 25 minutes. Add water as necessary for cooking if it reduces too much during this period.
